Healthy Final Four Snacks

One of my favorite activities over the past year has been hosting dinner parties at my house. Ever since my first job working in an event kitchen, cooking for large groups has come easily to me. There's something about seeing tangible results of a hard day's work, and instantly knowing if it was a success or failure by the patron's reactions. 

In recent months, a new cooking challenge has presented itself through new friendships with people in the health-centered world ... I've been trying to figure out how to merge the worlds of nutrition and yogi friends with those who could care less what they eat, and do it over family style meals. 

This post features two of my go-to appetizers that are perfect alternatives to game day snacks.

Buffalo Caulflour Bites

Ingredients 

1/4 tbs Garlic Powder
1/4 tbs Chili Powder
1/4 tbs White Pepper
1/4 tbs Sea Salt
1/2 cup Olive Oil
4 tbs butter  
2 cups buffalo sauce
2 Heads of Cauliflower 

Directions 

  1. Mix spices and olive oil in large bowl.
  2. Chop cauliflower florets and toss in spice mixture
  3. Place on baking sheet and cook for 15 minutes at 450F degrees 
  4. Melt butter and mix with buffalo sauce.
  5. Dip cauliflower in buffalo mixture and bake for another 15 minutes at 450F.
  6. Remove and serve

Margherita Slices

Ingredients 

5 Vine-ripened Tomatoes
Handful of Fresh Basil
1/2 cup Olive oil
1 tbsp Sea Salt
1 tbsp Ground Pepper
1/2 cup Parmesan cheese

 

Directions 

  1. Slice tomatoes
  2. Combine Oil, Salt and Pepper and brush on tomato slices 
  3. Sprinkle with cheese
  4. Top with basil leaf
  5. Repeat above steps for as many levels as needed
